A new gourmet food truck is set to open this Saturday, Dec. 2, outside of the Beau Monde Progressive Hair Studio & Day Spa at 235 N. Main St. before the start of the Gloversville Christmas Parade.

The owner of both businesses, Heather Lynn, says opening the food truck at the parade will be a look at what’s to come.

“This parade event will be a sneak peek before the trailer will go into winter storage,” Lynn said. “I will then work on getting some things in the schedule starting in the spring.”

Lynn has always had a passion for cooking and entertaining, and has been operating her busy salon for over 30 years, but it’s starting to take a toll on her body, she said.

“I’m just looking to slow down my own career a bit, or try something new,” she said. “I have always had a passion for cooking, making treats and entertaining. The plan is for the food truck to be available as a rental for parties.”

The truck has no fryer, and Lynn said healthier, grab-and-go options will be available including egg-bagel sandwiches, avocado toast, fruit cups, chili, her “famous” chicken salad sandwiches and waffles.

Opening another business in Gloversville was an easy decision for Lynn and is supported by the community.

“I have had a great career here so far and I see the need for breakfast and lunch meal options,” she said. “I love so many people in this community and I am very excited to get out there on a new adventure.”

Gloversville’s Downtown Development Specialist Jennifer Donovan said the food truck is a good addition to the community.

“Having her food truck at events will help give customers dining choices and we are excited that she is launching during the Gloversville Christmas parade,” Donovan said. “Supporting our local businesses and business owners means we are also supporting our friends, neighbors, relatives and ultimately our community. More businesses will help boost the local economy with their sales and spur more interest in coming to Gloversville.”

As the business picks back up in the spring, Lynn hopes to be involved in Gloversville’s Food Truck Friday as well as local pop-up events.

The food truck will have waffles available on Saturday, Dec. 2, for purchase from 3 p.m. to 7 p.m., cash only.
